Peasant Bread

I was shown this bread recipe in a by @williamcraft09@tiktok.com, and after seeing how easy it was, I knew I had to give it a try. It’s since become my go-to bread recipe because I can basically start it and then forget about it and nothing will go wrong. It requires no kneading, and no expensive mixer.


Servings

Makes two loaves

Ingredients

  • 2 cups all-purpose flour
  • 2 cups bread flour
  • 2 1/4 teaspoons active dry yeast
  • 2 cups luke-warm water
  • 1/2 cups sugar
    • OR 1/3 cups honey
  • 1 tablespoon salt

Special Equipment

  • 2 bread pans

Steps

  1. In a medium mixing bowl, combine dry ingredients.
  2. Add water, and fold together until a sticky ball of dough is formed.
  3. Let rest in mixing bowl for 2 hours
  4. In the meantime, butter two dishes to bake in
  5. After dough has rest, with two forks, pull the edges of the dough into the middle.
  6. Split the ball down the middle with the two forks, and place each half in the buttered dishes.
  7. Preheat oven to 425°F
  8. Let dough rest in dishes for 20 minutes
  9. Bake at 425°F for 15 minutes
  10. Reduce heat to 375°F and bake for another 18 minutes
  11. Remove from oven, and place on wire cooling rack to cool in dish for 8 minutes
  12. Remove from dish, and let finish cooling on wire rack

Storing

  • Store bread in a bread box, or a mostly-sealed bag to allow some airflow
  • Good approximately 1 week
