Classic Peanut Butter Cookies
Just a classic peanut butter cookie recipe. Not much else to say.

Makes about 16 cookies
Ingredients
- 1 cup smooth peanut butter
- 1 large egg (room temperature)
- 1 teaspoon vanilla extract
- 1 cup white sugar
- 1/4 cup white sugar (for rolling)
Special Equipment
- None, but an electric mixer of some kind would be helpful
Steps
- Preheat oven to 350°F
- Mix peanut butter, egg, vanilla, and 1 cup of sugar until smooth
- Scoop and mold into 1 inch balls of dough
- Place dough ball into sugar and roll to coat evenly
- Place on parchment-lined baking sheet with approximately 1 inch of space between cookies
- With a fork, press flat-side down on top of the cookies at opposing angles, forming a small grid
- Press firmly enough to leave a mark, but do not flatten the dough unless desired
- Bake 10 - 12 minutes
- Cool on the pan for 1 - 2 minutes, then move to a wire rack for cooling
